Creamy Spinach Pasta 🌿

I had hella spinach in the fridge, some leftover cashew cheese sauce and pine nuts (rare) so spinach pasta it it was! Loads of the recipe can be changed around, it's essentially a cashew cheese sauce with spinach, beans and pasta 😋

Cheesy Sauce 🧀

  • 1 Garlic clove
  • 1 boiled potato (optional)
  • ½ cup plant milk
  • ¼ cup cashews
  • ½ cup warm water
  • 1 tbsp flour

Pasta 🍝

  • 1 clove garlic
  • 1 bunch fresh spinach
  • ½ cup frozen spinach
  • 1 can four bean mix / any beans will do
  • Spaghetti / linguine type pasta

Seasonings 🌿

  • Salt
  • Pepper
  • Grated vegan cheese
  • Fresh herbs - e.g. oregano/parsley/chives/thyme/basil

Method 🥣

  1. Submerge the cashews in the warm water and set aside
  2. Sauté the garlic in a large pan on a low/medium heat with a little oil and a little water to keep it from browning
  3. Blend all of the cheesy sauce ingredients together
  4. Add the cheesy sauce to the pan and stir well
  5. Drain the beans well and add to the pan
  6. Once the beans are cooked and soft, add the spinach, herbs and grated cheese
